August 17 Beer Pairing Dinner With Guest Chef Ryan Tate

Since leaving Savoy earlier this year, Chef Ryan Tate has been working on opening his own restaurant and developing new menus for various events around the city. What will the menu consist of and how did you decide what to serve?

Jimmy’s No. 43 will be hosting another one of its famous Beer Pairing Dinners on The dinner will feature dishes prepared by guest chef Ryan Tate (formerly of Savoy) paired with Shelton Brothers’ selected beers from Jolly Pumpkin Artisan Ales and Belgian distiller Cantillon.

The menu will include heirloom tomato terrine with zucchini bread croutons and sour ale aspic; sour ale poached crab salad with peach, mango jus and avocado; roasted pork loin and crispy pork belly with smoked blue cheese spatzle and cherry-chili puree; and, for dessert, plum cake with Flemish ale ice cream.

This is my first beer dinner, so, I’ll just stick to what I like. We are pairing with sour ales (Shelton Brothers’ selected beers from Jolly Pumpkin Artisan Ales and Belgian distiller Cantillon), which are going to require some richer foods to balance out the acidity in the beer.  So, it being summer, I’m going to use fruits with natural sweetness and pork as the main course. It just has the richness to counter the ale.

What are you working on these days?

I have been working on opening my own restaurant.  I’m actually looking for a business partner, I’m a cook not a businessman. This beer dinner is by far the highlight of my summer.
Where did you meet Jimmy?
I met Jimmy at the very first cassoulet cook off at Jimmy’s 43. We borrowed from that to host a cassoulet event we hosted at Savoy, which Jimmy attended.  We just run into each other a lot.
