Jimmy’s Spirit Council is a series of tastings throughout the year where we support spirits and foods and the people who talk and write about them.
Every month we plan to pair the tastings with foods, farmers and/or authors. We are inviting leaders in the spirits industry, with a special emphasis on NY spirits, but are also including spirits from around the US, as well as our international favorites, to create a well-rounded year-long calendar of tastings.
This month we launch with John Henry of El Buho Mezcal, Claire Marin of Catskill Provisions and Daniel Grimaldi of McKenzie (Finger Lakes Distilling) as they meet head to head for the best spirit/pairing of the afternoon.
El Buho Mezcal – From Santiago Matatlan, Oaxaca, The Espadin are roasted in a stone pit fire for a week and crushed by a horse on a tohona stone mill. Double distilled in a 5th-generation copper still, drip by drip. Bottled by hand in rustic glass. Paired with ruby grapefruit and grasshoppers.
Catskill Provisions Honey Whiskey – We infuse our 80-proof handcrafted rye with late-summer honey from the surrounding Catskill Mountains for a smooth yet rich spirit with notes of toffee, vanilla, and smoky spice. With a mellow hint of sweetness to round out the edges, it’s a game changer for those afraid of the dark. Paired with honey and whiskey truffles.
McKenzie Rye Whiskey – McKenzie Rye Whiskey is made from local rye grain and is distilled using old-time techniques. We age this whiskey in new charred oak casks and finish in sherry barrels from local wineries. The sherry balances the spiciness of the rye and also gives a nod to the Finger Lakes wine region where this whiskey is produced. Paired with chocolate.
