We’re on the Road to Pig Island: Flying Pigs Farm Dinner Tonight!

While we wait for the official announcement of everybody’s favorite pork feast, Pig Island, Jimmy’s No. 43 is happy to host a piggy-licious dinner tonight (6/17 at 7 p.m. tickets here until 5 p.m.), with Guest Chef Derrick Prince and a menu featuring unusual cuts from Flying Pigs Farm pork. Tonight’s menu includes:

  • Amuse: Apricot country pate crostini with apricot thyme jam, beer pickled shallot and mint
  • First: Kale, mustard greens, avocado, asian vinaigrette, and crispy pig ear
  • Second: Squid ink ramen in pork faux (pho) broth with favas, pig tongue, pig shank and uni miso bubbles
  • Third: Seared pigs heart over sunchoke puree with wilted arugula, sunflower seed sauce, and sunflower sprouts
  • Fourth: Beer and apple braised pig cheeks over fennel and blue cheese risotto with fennel powder
  • Fifth: Leaf lard cardamom crust, pomegranate gel, macerated seasonal fruit, berry powder, cream
Owner Jimmy Carbone is going to pick the beer pairings himself, so look forward to a delectable and delightful night with craft beer and pork!
